It was my understanding that you couldn't edit .pdf files.

Well, I dunno about editing, I think Acrobat is the only one that can do that.
But for creating, I recommend OpenOffice.org 1.1

I create PDFs in the following ways:
1. Typeset a document in TeX and use pdftex to create a PDF. This is great for math stuff. 2. Print something to a postscript file and use ps2pdf to make a PDF from it. This works from word processors to browsers to text files to anything, but you need to be using a UNIX OS, since UNIX printing is built around postscript. 3. Create an image at 300dpi at the size in inches I want (usually US letter) using The GIMP (others like to use Photoshop) and export it. I usually do this to import PDFs, edit, and print them or for images, since it creates very large graphic PDFs that are only good for printing. I've filled out a few forms using this method. |

Similar to RamsusX.
BTW if you don't use linux you can achieve this by downloading miktex, ghostview and winedt.
