Sound - P.E.Op.S. DSound 1.09 or Eternal SPU; both are great SPU plugins, but I've been leaning more toward the new DSound plugin because of its accuracy. Video - Pete's OpenGL2; works great in 2D and 3D games, most accurate HW accelerated video plugin, supports screenspace shaders to enhance existing games in various ways, needs an ATI or nVidia GPU to use, does not work properly on Intel IGPs.

Use the new DSound 1.9, it kicks the crap outta Eternal. REAL Gaussian interpolation.
