Well, playing a game off an image is usually faster than using an actual disc, but that speed gain may not be noticeable sometimes. I myself have reported some (very few) cases that using an image would solve a problem encountered while running a game from a CD on pSX, but, as I said, that's very rare. So, if you want quick access to your games and have no problems concerning HDD space, you may want to try creating some .ccd/.img/.sub images (the most recommended image types for using with pSX, mainly for its dealing with subcode) from your CDs. However, if you had no problems running games off the CD or if you find no use on keeping your games around for potential "quick-starts", you may want to continue using CDs for "random-playing" purposes...

I should probably add... I once lost a CD-Burner (and the first disc of FFVII). It happened when the drive decided to spin up the disc to a high speed, and in a little under a minute or so, the disc shattered! The loud POP nearly scared me to death.

I guess my own advice with images vs CD's is... games that go through more "wear and tear" than others (like... you play it a lot or multiple people play it instead of just you) and games that are in poorer condition than others, should probably be made into images for best results. Also, games that are more likely to lag (like graphically-extensive RPG's) might also be made into images, to gain that small speed boost, as Melanogaster mentioned before.

As he also said, the ccd/img/sub image format is by far the best and most highly recommended format to use (with pSX, or for any other purpose to be honest). The cue/bin image format is a distant second, though still popular amongst a few people and the internet in general. The .iso format... I would never recommend. There are many other formats, but they are really irrelevant and unnecessary. Except for .cdz, which I recommend to turn your ccd/img/sub images into using the converter utility that comes with pSX, especially if you have any concerns about disc space. The nice thing about the .cdz format is... it's not really a new image format. It's really more of a compression (like .rar or .zip) format that can be read by pSX. So if you need to some time down the line, you can simply "decompress" them back to their original files using the same utility.
