Does anyone know of any programs that can make one of my PSX games into an image file that I can run using ePSXe?

For me the best is Blindwrite but many people here prefer CloneCD. Just try all of them and see what give the best result for you.

Well CloneCD tends to take quite some time, is that dependant on program or CD drive speed?

It depend on cd drive speed and your CD. If your cd is scartch cd or the cd surface is dirty it may take longer time to read.

iso-buster works great. You dont need a cd-writer to make images of a game
