I'm guessing your adding more ram, not replacing it all, so if you don't already have ddr2-800 there is no need to spend the extra money getting it, just get ram with equivalent speed ddr2 667 or 533.
If your ever planning on overclocking though, something you'll need to run PCSX2 games at anywhere near full speed you'll want to buy high and use only high quality ddr2-800 - 1066 rated ram. If what you have is lower rated ddr2 and you want to overclock, your system may be held back it. Mixing lower/higher rated ram will you forces the higher rated ram to perform at the same levels as the lower speed ram.

If you need ram with great skill then get G.Skill ram
They're highly overclockable and great for stock too even if you don't plan on overclocking. I highly recommend the 2x1gb HZ series kit Newegg.com - G.SKILL 2GB (2 x 1GB) 240-Pin DDR2 SDRAM DDR2 800 (PC2 6400) Dual Channel Kit Desktop Memory - Retail and this one if you low on cash Newegg.com - G.SKILL 2GB (2 x 1GB) 240-Pin DDR2 SDRAM DDR2 800 (PC2 6400) Dual Channel Kit Desktop Memory - Retail Great Skill In Memory World!! <-- Their slogan
