For general setting of Square games you can try this setting.

Plugin: Pete's OpenGL Driver 1.1.61
Author: Pete Bernert
Card vendor: NVIDIA Corporation
GFX card: GeForce2 GTS/AGP/SSE

Resolution/Color:
- 640x480 Fullscreen - Desktop changing [32 Bit]
- Keep psx aspect ratio: off

Textures:
- R8G8A8A8
- Filtering: 0
- Garbage collection: on
- VRam size: 64 MBytes

Framerate:
- FPS limitation: on
- Frame skipping: off
- FPS limit: 63

Compatibility:
- Offscreen drawing: 2
- Framebuffer texture: 2
- Alpha multipass: on
- Mask bit: off
- Advanced blending: on

Misc:
- Scanlines: off
- Line mode: off
- Unfiltered FB: off
- Dithering: off
- Screen smoothing: on
- Full vram: off
- Game fixes: off [00000000]

Try enabling 4xfsaa for better result and select the filtering to the one which suite your taste.
For FF7 and FF8, there are special setting which you must enable to fix some problem in the games.

this has been really useful for FFVII thanx
i used all the settings from G-Pitts and then changed the 1s that rei_fox suggests and it works great
except i cranked the resolution up and made colour depth 32 bit cause i just got a GF3 Ti 200

WuZMoT, believe it or not, the best way to play FF 7/8/9 is in 640x480 with 4xFSAA. Just make sure you are using Full vRam primatives instead of the gfx card buffer for framebuffer textures.

Why use Full VRAM primitives? Wouldn't that slow down the system greatly?

one last little problem that i have in FFVII and i am hoping that someone can shed some light,
As i go into a battle the screen freezes and the battle music as it starts go's VERY slow, the screen will be frozen for about 5 - 10 seconds after which the battle begins and is fine
this is really annoying cause it sounds really crap and everytime u go into a battle (VERY OFTEN) it feels like your computer is totally stuffed so does anyone know how to fix this prob?
its the last glitch i have in FFVII to iron out.

You are using FSAA now, yeah?
If you are, change Framebuffer texture to 0, and enable Full vRam primatives, otherwise it will always keel over and die.
