PSX .DAT Hacker and N64 ROM Hacker

I am remaking Mortal Kombat Trilogy as an online multiplayer flash game. I want to rip the graphics, music, and sounds from the PSX version, and the extra stuff from the N64 version. Do any of you know a utility I can use to look into the .DAT files for the PSX ISO? And an N64 ROM hacker as well?
