Whenever I get to a cinematics sequence... the screen turns grey and I can't see anything.... How can I fix this up?

Maybe your MDECS aren't enabled. You can enable them with ePSXecutor or editing the registry.

My Epsxexecutor doesn't seem to be working O.o;

You can still check if they are enabled by editing the registry. Here is the registry key where it is stored:
HKEY_CURRENT_USER\Software\epsxe\config

If your screen turns grey it's because you're playing from a savestate,so to fix it,load your savestate and save on a "real" memory card.

Don't use savestates in FF8. Like Raziel mentioned, they cause gray MDECs (although if you want them like that, go ahead and use savestates).
