Trial an error I'll say :P
Most games work on Flash 256Kb or EPROM 64kb. Although some are very specific.
Japanese games often work only on FRAM 32kb, well the one that I tested did that is... :)

read other threads in forum - search for the game u like - questions like that are already answered in the screenshot or release threads for each version - game testers post emulation setup settings

There's no definite way to find out. If you can't find someplace where it is already mentioned, you'll just have to try them all before one works.
Generally, large game = large save, but there are numerous exceptions.
For example, MechAssault: Phantom War (U) is one of the 1Gbit games, but only uses the smallest savetype (4Kbit EEPROM = 0.5Kbyte EEPROM in NO$GBA).

This site gives a lot of info on most games, including save type & size: Handheld Release Lists - releases.pocketheaven.com (http://releases.pocketheaven.com/?system=nds§ion=release_list)
