Most likely the answer will be "your own copy". The Echelon one sucks, it's got delayed sound in cutscenes anyway. As for compatibility with NullDC, I don't know but I'm sure someone else here knows :)

Check the screenshots thread. An user already posted screens of the NTSC-U version and it's totally playable.

Alright, so I'll use my copy of SoA. Would it be better if I made an image, or used the original disc?

CD/DVD Drives cannot read GD-ROM

You can't run it from a GD rom and you need the disc image. Unfortunately that requires either a broadband adapter or some other thing that apparently takes hours. (though maybe things have changed - I reallly want to extract the ISO of my Sonic Adventre 2 game, because taking my DC to uni is just so arkward. Wouldn't mind taking my Shenmue ones too).
I'm using the echelon but with the patch to remove all the echelon stuff. Unfortunatelythe sound is a little dodgy but I thought that was just the emulation. Anyway the sound isn't exactly the highlight of SoA, and all the speech is text.

When you say the patch to remove the echleon stuff, do you mean the soapatcher that they had on the chankast boards?

Yeah. I don't know why I'm using that but I prefer it to having that annoying startup noise thing.

Why my SOA image with the patch runs in spanish in chankast and in Nulldc runs in english. I don't understand why happen this. I'm from Spain and i prefer play game in spanish. Anyone can help?

Try booting nullDC with no game and going into the Dreamcast bios, I expect there are language settings there.

I have both a full NTSC rip that I made myself, it's in .cdi format because I made the files into a self boot image after dumping them. Anyway, they seem the same on nullDC. The delays in sound from the compression method echelon used don't seem to exist when I play the echelon version on nullDC so I'm not really sure. Either way the bugs and stuff seem exactly the same. By the way blaze, the echelon copy is a PAL version.
Another thing I have noticed, the start menu has a black bar on the top on the NTSC version as this screenshot shows:
