Just make sure the dc_flash.bin file is not write-protected and change the language in the bios settings to english. Violá Pal - English bios.

If you delete/rename dc_flash.bin to something else and start Chankast the emu will make a dc_flash.bin file with a red swirl (which would be the American version of the dc_flash.bin. Works with the bios, however I have not tested to boot games with the Chankast made flash.bin).

Small trivia: the reason they swirl is blue in Europe is because the red swirl looked to much like another companys logo.

[edit:] Yes you can make the AV problem "go away" by hex-editing or patching. Thou.... Really isn't worth the trouble. Better to wait for a new version of Chankast.
