What about Resident Evil Code Veronica?
A sleeper game that didn't sell well, but I think is worthy of a sequel is Geist.
A Nintendo basher who owns a Gamecube but can't help but badmouth the Wii has gotten me into Geist. I haven't progressed very far, but it is a cool 3rd party game and its "mature!"

I think a sequel would be great on the Wii...
