XMMS. Yes, XMMS. Other apps I either don't like the playlist method (especially Amarok) and/or are extremely unstable/buggy/crash on me. XMMS is the only music player I use, and destroys all others even today.

gaim -> Pidgin (new name)
DVD/CD:
cdrecord / wodim (Debian's version of cdrecord)
Bittorrent:
ktorrent (best one, I think)
image viewing:
gqview (I don't use compressed files, compression doesn't help much anyway)
irc:
irssi
other:
grip (cd ripper)
pan and/or klibido (usenet)
vim / gvim (best text editor ever. Bring on the holy wars.
)
gimp (image editing)
nethack (Best roguelike game ever.)
